Angel Food Cake With Lime Curd And Blackberries |

A heavenly angel food cake with a kiss of lime served with a creamy, tart lime curd and blackberry compote Ingredients:
1 angelfood cake mix |
2 t lime zest, minced |
10 eggs, beaten |
1 c fresh lime juice |
1 1/3 c sugar |
1 c or 2 sticks unsalted butter, softened |
1 pt of fresh blackberries |
1 c sugar |
2 c water |
Directions:
1. Mix cake according to directions folding in 1 T of the lime zest before baking. Cool 2. Lime Curd: melt butter in saucepan, add 1 c sugar, lime juice, and zest. Cook over low heat to dissolve sugar. Pour a little of the lime mixture into the beaten eggs, whisk and pour egg mixture back into pan; cook, stirring constantly till mixture thickens and coats the back of a spoon . Cool. 3. Blackberry Compote: Combine 1/2 pt of the berries with the sugar and water in small saucepan. Bring to a boil and cook until sugar is dissolved and mixture thickens slightly. Remove from heat and cool. Puree cooled berry mixture in food processor. Strain through a fine-meshed sieve. Discard seeds. Place remaining berries in a dish. Pour berry puree over berries. Let sit for 30 min. 4. To serve: place a slice of cake on a dessert plate. Spoon on lime 5. curd, spoon blackberry compote over top. Garnish with a fresh mint sprig. |
