Lite strawberry dessert. Ingredients:
1 - 16 oz pk angel food cake mix |
5 t confectioners' sugar |
1 - 8 oz carton reduced-fat strawberry yogurt |
1- 3 oz pk instant vanilla pudding mix, sugar-free |
3 drops red food coloring, optional |
2 c reduced-fat whipped topping |
Directions:
1. Preheat oven to 350 degrees. 2. Line a 15 x10 x1 baking pan with waxed paper. 3. Prepare cake according to package directions. 4. Pour batter into prepared pan. 5. Bake cake 15-20 minutes or until it springs back when lightly touched. 6. Cool for 5 minutes. 7. Turn cake onto a kitchen towel dusted with confectioners' sugar. 8. Gently peel off waxed paper. 9. Roll the cake up jelly-roll style in the towel, starting with a short side. 10. Cool on a wire rack. 11. In a large bowl, whisk the yogurt, pudding mix and food coloring if desired. 12. Fold in whipped topping. 13. Unroll cake; spread filling evenly over cake to within 1/2 of edges. 14. Roll up. 15. Cover and freeze. 16. Remove from freezer 30 minutes before slicing. |
