Another holiday favorite...my mother made these while we were kids. I use them on my holiday cookie plates. Ingredients:
1 cup shortening |
1 1/2 cups sugar |
2 large eggs |
1 teaspoon lemon extract |
1 teaspoon vanilla extract |
2 1/2 cups flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
1/4 cup sugar |
Directions:
1. Beat shortening and 1 1/2 cups sugar at medium speed until fluffy. 2. Add eggs and extracts; beat until blended. 3. Combine dry ingredients,gradually add to creamed mixture, beating well. 4. Cover and chill at least 1 hour. 5. Shape dough into 1-inch balls. 6. Roll balls in 1/4 cup of sugar. 7. Place on ungreased cookie sheets. 8. Bake at 350° for 8-9 minutes, until barely golden. 9. Let cool 2 minutes on sheets. 10. Transfer to wire racks to completely cool. |
