Yet another from Nigella Lawson's Feast cookbook (awesome book!). This is a recipe from a little deli in Fairfield Connecticut called The Pantry. Nigella notes that she makes a chocolate peanut butter version by using 2 cups raw peanuts in place of the almonds and adding 1/4 cup good quality cocoa powder along with the oats and omitting the raisins. Ingredients:
4 1/2 cups rolled oats |
1 cup sunflower seeds |
3/4 cup sesame seeds |
3/4 cup applesauce |
2 teaspoons cinnamon |
1 teaspoon ginger |
1/3 cup brown rice syrup or 1/3 cup rice malt syrup or 1/3 cup golden syrup |
1/4 cup honey |
3/4 cup light brown sugar |
2 cups whole almonds |
1 teaspoon sea salt |
2 tablespoons sunflower oil |
2 cups raisins |
Directions:
1. Preheat oven to 300 degrees. 2. Mix everything (except the raisins) together. 3. Spread on baking sheets and bake for 40-60 minutes (till evenly golden, after one turning). 4. Cool and add raisins. |
