Ingredients:
1/2 teaspoon(s) black pepper |
1/4 teaspoon(s) cayenne pepper |
1/2 cup(s) green bell pepper, diced-1/4 |
1/4 cup(s) green onion, finely chopped |
4 links cajun style andouille sausage, diced-1/2 |
1/2 cup(s) red bell pepper, diced-1/4 |
2 pound(s) red potatoes, diced-1/2 |
2 pound(s) red potatoes, diced-1/2 |
1/4 teaspoon(s) salt |
1/2 stick(s) unsalted butter |
Directions:
1. Over medium heat, saute' the potatoes and onions in butter for 10-15 min., stirring occasionally. Add the sausage, bell peppers, salt, black pepper and cayenne, and continue frying until the sausage is browned, about 5 minutes. Add more salt & pepper to taste and serve garnished with greenonions. Serves 4-6 |
