Hard-boiled eggs in a curry sauce - awesome! Ingredients:
8 eggs, hard boiled |
2 tablespoons oil |
1 onion, finely chopped |
1 teaspoon ginger, grated |
3 garlic cloves, crushed |
3 bay leaves |
14 ounces crushed tomatoes |
1/4 teaspoon ground turmeric |
1/2 teaspoon chili powder |
1 teaspoon ground cumin |
1 teaspoon ground coriander |
1 tablespoon garam masala |
Directions:
1. Heat the oil in a saucepan. Add the onion, ginger, garlic, and bay leaves, and cook for four minutes, or until the onion is soft. Add the tomato, turmeric, chili powder, cumin, coriander, 1 tsp salt, and 1 cup of water. 2. Bring to a boil, then reduce heat and simmer for three minutes. 3. Add the garam masala and eggs, then simmer for a minute or two to warm the eggs. |
