Andagi are round, golf ball sized sweet doughnuts, similar to cake doughnuts in taste and texture. This is a simple version of the traditional andagi, with a hint of orange. From an old Hawaiian Electric Company cookbook. Ingredients:
3 cups flour |
1 cup buttermilk baking mix |
3/4 cup sugar |
1 tablespoon baking powder |
1 teaspoon salt |
2 eggs |
1 tablespoon grated orange rind |
1/2 cup orange juice |
3/4 cup milk |
oil (for deep frying) |
Directions:
1. In a large mixing bowl, sift flour with baking mix, sugar, baking powder and salt. Add eggs, orange rind, juice and milk; stir until dry ingredients are moistened and dough is smooth. 2. Heat oil to 375°F. 3. Drop dough by teaspoonfuls into hot oil; fry until golden brown. Drain on paper towels. |
