known as 'sambal bilis' in where i'm from, malaysia. popular side dish serve with few types of food such as rice, bread, soup, noodles and as fillin for some types of breads and buns. Ingredients:
100-200g dried anchovies- wash and strain. |
2 shallots, 1 clove garlic, 1 inch shrimp paste (belacan) |
-blend together with 1/2 cup water using blender or pounded in a mortar without water. |
6 table spoon chilly paste (can refer to 'fried vermicelli' how to make your own chilly paste). |
1/2 cup tamarind juice |
1 onion- slice thin |
1 1/2 cup water |
1 tea spoon salt |
1 1/2 tea spoon sugar |
2 cups oil for cooking. |
Directions:
1. as usual heat oil in a wok and add in the blended mixture, stir-fry until the water dry and fragrance. 2. add chilly paste and stir. keep stir once a while to make sure the paste doesn't stick. 3. after the chilly cooked well, where we can see its boil on the spatula, pour in the tamarind juice. 4. stir and let it boil before pour in water and let it boil again. 5. add salt and stir and add in the sliced onion together with anchovies. 6. mix them well and let it cook for about 10 min. 7. add sugar, stir and taste add more sugar and salt if not enough. 8. now its ready to serve.. :) |
