Anchovy Canapes

Ingredients:
4 ounces canned flat anchovy fillets
2 medium garlic cloves chopped fine
1 teaspoon tomato paste
1-1/2 tablespoons olive oil
2 teaspoons lemon juice or red wine vinegar
1 teaspoon freshly ground black pepper
8 slices french bread
1 teaspoon finely chopped parsley
Directions:
1. Drain anchovies and place in heavy bowl with garlic and tomato paste.
2. Mash mixture to a smooth puree.
3. Dribble in oil a few drops at a time stirring until mixture becomes thick and smooth.
4. Stir in the lemon juice and pepper.
5. Preheat oven to 500.
6. Brown bread lightly on one side.
7. While bread is still warm spread untoasted side with anchovy mixture.
8. Arrange bread on a baking sheet and bake 10 minutes.
9. Sprinkle with parsley and serve at once.
