These beans come from Adobe Milling in Dove Creek in Colorado. Anasazi Beans are sweeter than a Pinto Bean, cook faster and what great about them is you donĀ“t have to soak them. Ingredients:
1 lb anasazi beans |
1 large onion, cubes |
2 ham hocks |
salt |
pepper |
1/2 gallon reduced-sodium chicken broth |
Directions:
1. Soak the beans overnight and drain off the water. 2. In a large pot add beans, ham hocks, onion, salt, pepper and broth and simmer until the ham hock and beans are tender. |
