A real Summer ode!! Ingredients:
14 oz cooked, peeled king prawns |
5 fl oz salad dressing |
2 avocados peeled and sliced |
16 cherry tomatoes, quartered |
2 roman lettuces, halved and shredded |
1 guacamole recipe (about 2 1/2 cups) |
2 limes, cut into wedges |
Directions:
1. Put the prawns and 6 tbsp of the dressing into a bowl, stir, then cover. 2. Put the avocado and tomatoes into a separate bowl, stir in the rest of the dressing, then cover. 3. Chill both bowls for 2 hours. 4. Divide de lettuce between 8 serving dishes or cocktail bowls. Spoon the avocado and tomatoes on top, then the prawns and a scoop of guacamole. 5. Finish with a lime wedge and freshly ground black pepper. |
