This is very easy to make and hits the sweet tooth spot. It's packed with protein due to the peanuts, so I figure it can't be that bad for you ;) Ingredients:
crust |
34 oreo chocolate cookies |
1/4 dup butter |
filling |
1 8 ounce package cream cheese, at room temperature |
3/4 cup confectioners' sugar |
1/2 cup peanut butter, smooth (i use peter pan) |
2 tablespoons milk |
1 cup heavy cream, whipped |
2 tablespoons unsalted peanuts chopped |
Directions:
1. Crust: 2. In a large resealable plastic bag, using a rolling pin, crush 20 Oreos. 3. Reserve 2 tablespoons for topping. 4. In a medium saucepan, over low heat, melt butter. 5. Remove from heat and stir in Oreos. 6. Press evenly onto bottom of 9-inch pie plate. 7. Stand remaining Oreo cookies around sides. 8. Refrigerate while you prepare the filling. 9. Filling: 10. In a lare bowl, with an electric mixer at high speed, beat cream cheese until fluffy. (I love the word fluffy!) 11. Beat in peanut butter and milk until smooth. 12. Fold in whipped cream. 13. Spread evenly into pie crust. 14. Sprinkly top with peanuts and reserved Oreo cookies. 15. Refrigerate 5 to 6 hours before serving. 16. ***Cover if there is ANY danger of another food odor being absorbed, such as a garlic or onion smell. Don't risk ruining this pie due to an unwanted odor or taste from the refrigerator.*** I did that...ONCE!!!! |
