Stuffing includes rice, chicken broth, and vegetables. Got the recipe from my sister but tweaked it a bit. Ingredients:
1 (6 ounce) package long grain and wild rice blend |
1/4 cup butter |
1 1/3 cups celery, chopped |
1 onion, chopped |
1 red bell pepper, finely chopped |
1 medium carrot, finely grated |
1 cup walnuts, chopped |
1/4 teaspoon cayenne pepper |
1 (6 ounce) box chicken flavor stuffing mix |
1 large egg |
1 cup chicken broth (campbell's) |
Directions:
1. Prepare and cook rice according to package directions. 2. In a large skillet, melt butter, and saute celery,onion, bell pepper,carrot, and walnuts. 3. Stir in cayenne pepper. 4. Prepare chicken stuffing acording to package directions. 5. In a large bowl, combine rice, celery-carrot mixture, egg, and prepared stuffing mix. 6. Fold in chicken broth. 7. Spoon mixture into a buttered 3 quart baking dish. 8. Cover and bake for 35 minutes. |
