This is an old time Amish recipe for Rolled Oats Cake. This makes me feel like a kid again :> Ingredients:
1 cup oats |
1 1/4 cups boiling water |
1/2 cup shortening |
1 cup white sugar |
1 cup brown sugar |
2 eggs |
1 teaspoon vanilla |
1 1/2 cups flour |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
5 tablespoons oleo |
1/2 cup brown sugar |
1/2 cup milk |
Directions:
1. Mix oats and boiling water; let stand 20 minutes. 2. Cream together shortening, sugar, eggs, vanilla and add cooled oats with dry ingredients. Bake at 350 degrees for 35 minutes. Boil 7 minutes. Add 1/2 cup coconut and 1/2 cup nuts. |
