My husband normally HATES meatloaf, but because of the sauce, he loves this one. I usually have left-over sauce after baking. I just sit it to the side for a topping. Ingredients:
2 lbs ground beef |
2 1/2 cups crushed ritz crackers |
1 medium onion, chopped |
2 eggs |
2 slices bacon |
3/4 cup ketchup |
1/4 cup brown sugar |
1 cup ketchup |
2 tablespoons white vinegar |
3/4 teaspoon salt |
2 tablespoons yellow mustard |
1/2 cup brown sugar |
Directions:
1. Preheat oven to 350. 2. Mix all meatloaf ingredients, except bacon. 3. Press into loaf pan and top with bacon. 4. Bake for 1 hour. 5. Mix sauce and spread over top during last 15 minutes of baking. |
