I found this in a September 1981 issue of Bob Appetit in an advertisement for Kraft cheese. It has all the right ingredients for a tasty, quick and kid-friendly meal! You could top it with a dollop of sour cream or guacamole for an even tastier treat! Ingredients:
1 lb ground beef |
1 cup chopped onion |
2/3 cup chopped tomato |
1/2 cup pitted ripe sliced ripe olives |
1 tablespoon chili powder (or to taste) |
1/2 teaspoon salt |
1/4 teaspoon pepper |
3/4 cup cornmeal |
1/4 cup flour |
1/2 teaspoon salt |
1/2 teaspoon baking powder |
1 cup hot water (not boiling) |
2 tablespoons butter or 2 tablespoons margarine, melted |
1 1/2 cups shredded sharp cheddar cheese |
1/2 cup pitted ripe sliced ripe olives |
Directions:
1. Brown meat;drain. 2. Add onion,tomato,olives and seasonings; cook until onion is tender. 3. Combine cornmeal,flour,salt and baking powder. 4. Add water and butter or margarine; mix until smooth. 5. Stir in 1 cup cheese and olives. 6. Pour cornmeal mixture into greased 9-inch pie plate. 7. Spoon meat mixture into center of cornmeal mixture and press down gently. 8. Bake in a 400 degree preheated oven for 25 minutes. 9. Top with remaining cheese. 10. Garnish with additional olive slices, if desired. |
