American Green Salad With Cheddar Cheese & Panko Topping |

My absolute favorite salad! The veggies and toppings that I like to use the most at the salad bar, but made at home. Measurements are approximate. I like this the most with a good French or 1000 island dressing. Instead of croutons, buttered panko does the job way better because I have no patience to make my own croutons. Ingredients:
2/3 cup butter lettuce |
2/3 cup iceberg lettuce |
2/3 cup romaine lettuce |
1/4 cup cucumber (sliced very thin and fine) |
1/3 cup red cabbage |
1/3 cup cheddar cheese, shredded |
1/4 cup chickpeas |
1 tablespoon carrot, shredded |
2 tablespoons finely chopped radishes |
1/3 cup panko breadcrumbs |
1 tablespoon butter |
Directions:
1. In a frying pan, melt the butter then put the panko in and mix until the crumbs are nice and coated. Put in a bowl and let cool for a few minutes. 2. In a large bowl, put all the ingredients together and toss. 3. Serve with a tangy French or 1000 island dressing, or your favorite type. |
