My mother makes these cookies every year at Christmas. They are a big hit and good with coffee. Ingredients:
1 tsp. baking powder |
2 cups sifted all-purpose flour |
1/2 tsp. baking soda |
1/2 tsp. salt |
1 cup softened butter |
1 cup packed brown sugar |
1 cup granulated sugar |
1 tsp. vanilla flavoring |
1 cup quick cook rolled oats |
1 cup chopped nuts (pecans or walnuts) |
1 cup raisins |
1 1/2 cups flaked coconut |

1 cup snipped pitted dates |
for a milder flavor |
1 tsp. orange rind |
1 tbsp. orange juice |
Directions:
1. Preheat oven to 375 degrees 2. Sift flour with baking soda, baking powder, and salt 3. Cream butter until light and fluffy, gradually adding in sugars 4. Add eggs, rind and vanilla and beat well 5. Blend in flour mixture, rolled oats, nuts, raisins, dates and coconut 6. Drop by rounded tablespoons onto ungreased cookie sheet 7. Bake for 10-12 minutes |
