Amazing Vegetarian Split Pea Soup |

A very tasty sweet and spicy split pea soup. Ingredients:
3 carrots |
1 yellow onion |
3 cloves garlic |
1 tbsp olive oil |
16 oz split peas |
1/4 tsp cumin |
1/2 tsp caraway seeds |
1 tsp basil |
1/2 tsp oregano |
1/4 tsp cayenne |
1/4 tsp bay leaves |
2 l water |
Directions:
1. Saute the carrots (sliced), onions (diced), and garlic (minced) in olive oil until onions are translucent. 2. Add split peas and 1 L water. Stir in all spices (careful with the cayenne- 1/4 tsp makes it rather spicy). 3. Cook for 1 hour, 20 minutes. Add more water as needed for desired consistency. Add salt and pepper to taste. |
