Rub for meats, poultry, and seafood. Ingredients:
2 teaspoons scotch bonnet peppers, chopped fine |
2 tablespoons dried chilies, whole |
2 tablespoons dried onion flakes |
1 tablespoon dried garlic flakes |
1 tablespoon coarse salt |
2 teaspoons ground coriander |
2 teaspoons ground ginger |
1 teaspoon black pepper |
1 teaspoon allspice |
1/2 teaspoon cinnamon |
1/4 teaspoon clove |
1/4 teaspoon nutmeg |
Directions:
1. Grind chilies, garlic flakes and onion flakes in coffee grinder. For about 5 seconds. Chopping finer but not powdery. Mix with rest of ingredients and rub onto entree before cooking. Has a zingy taste. |
