Amazing Pumpkin White Chocolate Chip Cookies |

This recipe is from a cookbook called Old-Fashioned Christmas Cookies...it is amazing! The cookies have a wonderful soft, cake-like consistency and the cream cheese frosting adds a nice touch of richness. I love making these during the holidays and they always receive rave reviews. Ingredients:
2 cups butter, softened |
2 cups granulated sugar |
1 (16 ounce) can solid pack pumpkin |
2 eggs |
4 cups all-purpose flour |
2 teaspoons pumpkin pie spice |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 (12 ounce) bag white chocolate chips |
1 (16 ounce) container cream cheese frosting |
1/4 cup light brown sugar, packed |
Directions:
1. Preheat oven to 375°F Grease cookie sheets. 2. Beat butter and granulated sugar in large bowl until light and fluffy. Add pumpkin and eggs; beat until smooth. Add flour, pumpkin pie spice, baking powder and baking soda; beat until just well blended. Stir in white chocolate chips. 3. Drop dough by teaspoonfuls about 2 inches apart onto prepared cookie sheets. Bake about 16 minutes or until set and bottoms are slightly brown. Cool 1 minute on cookie sheets. Remove to wire rack to cool. 4. Frosting: Combine cream cheese frosting and brown sugar in a small bowl. 5. Spread frosting on warm cookies. |
