I used to work at a restaurant and they made this awesome, tasty pasta salad. My Italian roots just soothe when I eat this. I even add in grilled rosemary chicken to it,just to get more protein into it. I hope you enjoy this! Ingredients:
1/4 cup cucumber, sliced and then cut into fourths |
1/4 cup tomato, cut into fourths |
1/4 cup kalamata olive |
1/4 cup red onion, thinly sliced |
1 1/2 teaspoons italian seasoning |
2 1/2 tablespoons feta cheese |
2 cups bow tie pasta, cooked |
1 tablespoon red wine vinegar |
4 tablespoons extra virgin olive oil |
1 pinch garlic powder |
1 pinch onion powder |
salt |
fresh cracked pepper |
Directions:
1. In a small bowl, whisk onion powder, garlic powder, olive oil and red wine vinegar together till emulsified(will look like a regular dressing). 2. In a large bowl, combine all other ingredients. 3. Mix till completely combined. 4. Stir in oil and vinegar. 5. Salt and pepper to taste. |
