This is a meat lovers chili that is perfect for warming you up on those cold winter days. I based my chili on ratherbeswimmin's awesome ground beef chili #36847 but I upped the meat factor to please the boys and added more seasonings to justify my outrageously large spice cupboard (lol!) Ingredients:
2 lbs stew meat, browned |
1/2 lb ground beef, browned |
1/2 lb ground pork, browned |
1/2 lb bacon, cooked but not crisp |
1 large onion, chopped |
2 celery ribs, chopped |
2 (16 ounce) cans kidney beans, one dark one light red |
1 (29 ounce) can tomato puree |
1 (16 ounce) jar chunky salsa |
1 (14 1/2 ounce) can diced tomatoes, undrained |
1 (10 ounce) can condensed beef broth |
1 cup water |
1/4 cup chili powder |
2 tablespoons worcestershire sauce |
1 tablespoon dried basil |
2 teaspoons ground cumin |
2 teaspoons steak sauce |
1 teaspoon garlic powder |
2 teaspoons ground coriander |
1 teaspoon dried oregano |
1/2 teaspoon cayenne |
1 teaspoon salt |
1 teaspoon pepper |
1 tablespoon brown sugar |
1 1/2 teaspoons browning sauce |
Directions:
1. Cook onion and celery in a large dutch oven until tender. 2. Add browned and drained meats to the pot. 3. Add all remaining ingredients and stir well. 4. Bring to a boil, reduce heat and simmer uncovered for 60 min or until it is as thick as you like. |
