Amazing Ham and Potato Soup

I found this recipe when I was looking for a healthy and lower calorie meal to make. I absolutely love this soup. It was so good that I will never make another ham and potato recipe again even when I am not dieting. I have yet to try freezing it but I am sure it would freeze well too. I am tempted to try it without adding the milk mixture and just using the potato flakes to thicken but I am not sure if that will change it much but it sure would make it easier.
Ingredients:
6 1/2 cups water
4 tablespoons chicken bouillon granules
7 cups diced potatoes
1 bunch celery
1 chopped onion
1 1/2 cups diced cooked ham
10 tablespoons all-purpose flour
3 cups milk
1 cup instant potato flakes
Directions:
1. Mix together water and chicken bouillon granules in a crockpot. Add potatoes, celery, onion, and ham.
2. Cook on low for about 7 hours.
3. About 30 min before dinner take 10 Tbsp of the chicken broth out of the crockpot and put in a med sized pan, slowly add the flour. Add milk, stirring constantly as not to let clumps form Cook on med-low heat until thick (don't worry if it doesn't thicken right away, it will. Add the milk mixture to the crockpot and stir inches If this is not thick enough for your liking add approx 1 cup instant potato flakes and let sit for about 15-20 minute Enjoy!
