Amazing Guacamole From Costa Rica |

This dish is seriously healthy and really high in good fats (monounsaturates) - great for the arteries! I learned how to make Guacamole in Costa Rica - I know its a mexican dish but hey maybe this is the costa rican twist! Read more ! My family are scared of weird food - but love this! This Christmas I made a big bowlful and served it with crackers (hummous and pate too) to all my neighbours who came over - and they polished it off. Irish people surprise me at how open they are to new tastes (....sometimes, more often it is give me a potato! ). Half the quantities for a small bowl perfect to last you a day or two! Ingredients:
2 avacados |
1 small tomato |
juice of one lime (or lemon if you have no lime) |
2 tablespoons of onion (white) finely chopped |
half a tsp salt |
2 tbsp fresh coriander (if you don't have fresh, try a tbsp the dried stuff - add more later if needed) |
tobasco (few shakes- more if you like it hot!) |
1/2 teaspoon worchester sauce (lee and perrins type) |
Directions:
1. Peel and chop the avacado (it should be ripe and not too hard) 2. Chop tomato finely (you could skin it but i never do) 3. Put onion, avacado, salt, lime juice, coriander and the sauces into a blender and BLEND but leave A LITTLE LUMPY (not too chunky, not completely smooth) 4. I usually throw in the finely chopped TOMATO at the end and give it a LITTLE WHIZZ- just so its left a little chunky 5. Cover with cling film or tin goil and CHILL for half hour before serving 6. Serve with CRACKERS (or tacos they are just less healthy!), in a SANDWICH instead of butter, on TOAST with scrambled eggs for breakfast (seriously yum!) |
