AMAZING COCONUT PIE This recipe comes from my cousin Bethany’s collection. I obtained this when I inherited the family collection in 1980. Ingredients:
2 cups milk |
3/4 cup sugar |
1/2 cup biscuit mix |
1/4 cup butter melted |
4 eggs |
1-1/2 teaspoons vanilla |
1 cup shredded coconut |
Directions:
1. Combine milk, sugar, biscuit mix, eggs, butter and vanilla in electric blender. 2. Cover and blend on low speed for 3 minutes. 3. Pour mixture into greased 9 pie pan. 4. Let stand for 5 minutes then sprinkle with coconut. 5. Bake at 350 for 40 minutes. 6. Serve warm. |
