A luscious bisque for seafood lovers. Ingredients:
10 oz.minced clams |
1/2 cup finely chopped celery |
3 tbsp. unsalted butter,divided |
2 tbsp. flour |
1 cup cream or whole milk |
cam juice |
1 cup chicken broth |
1 cup mashed potatoes |
1/4 tsp.fresh ground pepper |
1/4 tsp. salt |
1 tsp.grated raw carrot. |
Directions:
1. Drain clams;reserving the juice. 2. Saute celery in butter for 5 minutes over low heat. 3. Melt 2 tbsp. butter in top of a duble boiler;add flour,stir well. 4. Add milk slowly. 5. Stir constantly to keep smooth. 6. Add clam juice and chicken broth. 7. Add potatoes and seasonings. 8. Cook 5 minutes. 9. Add clams and celery. 10. Cook 5 more minutes. 11. Add parsley and the carrots. 12. Stir and serve with crusty bread of your choice! |
