These brownies taste like chocolate Madeleine cookies-they are just wonderful, and can be served as brownies or as cupcakes. Not only that, you only need two pans to make them: the pot in which the butter is melted, and the pan into which you pour the batter. Ingredients:
2 cups white sugar |
1 cup butter |
1/2 cup cocoa powder (dutch processed is best) |
1 teaspoon vanilla extract |
4 eggs |
1 1/2 cups all-purpose flour |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
Directions:
1. Heat oven to 350* F. 2. Melt the butter in a medium-large pan. 3. Let cool slightly; then mix in the ingredients in the order given. 4. Bake in either a greased brownie pan or a lined muffin pan. 5. Bake for 35-45 minutes, checking after 30 minutes. 6. The brownies are done when a toothpick comes out with a few moist crumbs. |
