This is a terrific breakfast or brunch recipe. So quick and so easy - You must make sure you serve eggs and egg-rich foods immediately after cooking or refrigerate and serve within 3-4 days. And don't forget to refrigerate any leftovers right away. Ingredients:
6 eggs |
1 1/2 cooked broccoli, chopped |
1 garlic clove, finely chopped |
1 tablespoon crumbled goat cheese and grated parmesan cheese or 1 tablespoon light cream cheese and grated parmesan cheese |
1/2 cup low fat cottage cheese |
1/2 cup green onion, chopped |
1/2 cup milk |
1/2 cup bisquick baking mix |
salt and pepper |

Directions:
1. Spray a 9-inch pie plate with cooking spray. Set aside. 2. Spray a ninsrick skillet with cooking spray. Heat over medium heat. Sauté green onions and garlic for 5 minutes or until transparent. Stir in broccoli. 3. Layer broccoli mixture and cottage ccheese in pie plate. Set aside. 4. Whisk eggs with milk and baking mix; season weith salt nad pepper. 5. Pour over cottage cheese in pie plate. 6. Sprinkle top with goat cheese and parmesan cheese. 7. Bake in a 350F oven for 25 minutes or until a knife inserted near the center comes out clean. |
