This is amazing banana bread (it's more like cake). Again Norwegian. In fact, I had the very same banana bread made by two unrelated families from the Midwest, both with Norwegian roots. Ingredients:
1/2 cup butter |
1 cup sugar |
2 eggs |
1 tsp soda |
dash salt |
1/2 cup buttermilk |
1 1/2 cup flour |
3 bananas (that are browning) |
Directions:
1. Cream together butter and sugar. 2. Add eggs, soda and salt. 3. Alternately add buttermilk and flour. 4. Add bananas (mashed). 5. Pour into loaf pan. 6. Bake at 350 degrees for at least an hour. (Make sure not to overbake.) |
