A great appetizer or light entree when you feel like doing some Mexican goodies. Ingredients:
1 1/4 cups monterey jack cheese or white cheddar cheese, coarsely grated |
1/2 cup sour cream |
2 scallions, both white and green parts, trimmed and thinly sliced |
1 tomato, finely diced |
1/4 cup cilantro leaves, fresh |
12 to 16 pickled jalapeno chilies, chopped |
1/2 teaspoon cumin, ground |
salt to taste |
freshly ground black pepper, to taste |
8 flour tortillas (8 inch) |
Directions:
1. Preheat oven broiler and broiler pan (leave it under the broiler until ready to cook. 2. Combine the cheese, sour cream, scallions, tomato, cilantro, chilies, and cumin in a small bowl and stir to mix. Add salt and pepper and stir. 3. When ready to cook, lay 4 tortillas out on worktop and spread them evenly with the cheese mixture. Press the remaining tortillas on top to make a sandwich. Place one on the hot broiler pan and broil until lightly browned on both sides, 2 to 4 minutes per side, turning carefully with a large spatula (you may have to use two spatulas). 4. When done, place quesadillas on a pizza pan or large serving plate and cut each into 8 wedges for serving. 5. Makes 32 wedges. Serves 8 as an appetizer or 4 as a light entrée. 6. Note: For spicier quesadillas use chopped fresh jalapenos, with or without the seeds. |
