i used tempeh for my protein in this salad i tossed it with a couple tablespoons of olive oil and some spices and roasted it until slightly crisp. i cut it into small chunks but you can add whatever protein works for you Ingredients:
1 cup granny smith apple |
1/2 cup red onion |
1/2 cup celery |
1/4 cup miracle whip |
1/4 cup walnuts |
Directions:
1. chop apple and toss with lemon juice or place in a bowl of cold salt water to keep from browning 2. chop onion and celery into small dice 3. roughly chop walnuts 4. toss with miracle whip 5. add chunks of tempeh or chicken 6. chill for at least an hor before serving |
