ALTON BROWN'S SWEET POTATO PIE |

Ingredients:
1 lb 3-oz sweet potatoes, roasted or canned |
1 1/4 cup(s) light cream |
3/4 cup(s) dark brown sugar, packed |
1/2 teaspoon(s) cinnamon |
1/4 teaspoon(s) nutmeg |
5 egg yolks |
1 teaspoon(s) vanila extract |
salt |
1 pie shell, deep dish |
1 cup(s) pecans, toasted or candied |
1 tablespoon(s) maple syrup |
Directions:
1. Mash sweet potatoes with potato masher and set aside. 2. Preheat the oven to 350. 3. Place sweet potatoes in the bowl of a mixer and beat with the paddle attachment. Add cream, sugar, spices, yolks and salt to taste. Beat until well combined. Pour this batter into the pie shell and place onto a sheet pan. Sprinkle candied pecans on top and drizzle with maple syrup. 4. Bake for 50-55 minutes or until the custard reaches 165-180. Remove from oven and cool. Keep refrigerated after cooling. |
