Too good to be bad for you, these babies are loaded with protein and soluble fiber from oats and heart-healthy monounsaturated fats from the peanut butter. Seriously delish, these fudgey babies are practically perfect - lightly sweet, but not cloying and even better, chocolatey! This breakfast 'truffle' treat is great for breakfast on the go, or even a morning pick me up. Or both! * now altered to be lowered in sugar, but not yet tried
Ingredients:
30 g porridge oats
2 g stevia
1 tsp honey
1 tbsp natural peanut butter
1 tsp cocoa powder
2 tbsp water
1 tbsp ground almonds (or more, depending on how many truffles you make)
Directions:
1. Mix all ingredients except ground almonds together well.
2. In teaspoonfuls, drop into ground almonds, roll into balls. Make as many as you like (I usually get around 8)
3. Eat straight away or leave in fridge overnight for a fudgey consistency.
4. VARIATION: If you like a sweet and salty flavor, instead of ground almonds, roll in 1 tablespoon of finely chopped or whole salted peanuts.
