From Quick-Fix Veg Ingredients:
1 tablespoon extra virgin olive oil |
1 garlic clove, chopped |
3 scallions, chopped |
4 cups vegetable broth |
1 (16 ounce) package frozen mixed vegetables |
1 (16 ounce) can chickpeas, drained and rinsed |
1 (15 ounce) can petite diced tomatoes, drained |
1/3 cup alphabet shaped pasta |
salt & pepper |
Directions:
1. Cook garlic and onion in EVOO over medium heat. 2. Add broth and bring to a boil. 3. Add mixed vegetables, chickpeas, and tomatoes. Season to taste with salt & pepper. Cook 5 minutes. 4. Add pasta, simmer 10 minutes. |
