Your toddler will love finding and recognizing letters in their soup. Look for whole-wheat alphabet pasta for added fiber and vitamins. Ingredients:
1 tablespoon vegetable oil |
1 medium onion, chopped |
2 carrots, chopped |
2 celery ribs, chopped |
2 garlic cloves, minced |
2 (32-ounce) containers fat-free, less-sodium chicken broth |
2 cups chopped cooked chicken |
1/4 teaspoon dried thyme |
1/2 cup uncooked alphabet-shaped pasta |
Directions:
1. Heat oil in a Dutch oven over medium-high heat until hot. Add onion, carrot, and celery to pan. Sauté vegetables 5 minutes; add garlic, and sauté 1 minute or until vegetables are tender and mixture smells good. Stir in broth, chicken, and thyme. Bring to a boil; reduce heat, and simmer, stirring occasionally, 15 minutes. Stir in pasta, and cook 8 minutes or just until pasta is tender. |
