High fibre & nutritionally delicious. Great for breakfast, lunch or snack. Ingredients:
wet ingredients |
5 cups unsweetened applesauce |
1 container 675 gm molasses |
1 cup low fat plain yogurt or buttermile |
2 eggs |
mix together in extra large bowl |
after mixing stir in |
1 cup dried dates |
1 cup of mixed dried fruit |
dry ingredients |
2 cups flour (whole wheat, oat, soy) |
1 cup natural bran |
1 cup wheat germ |
1 cup ground flax |
3 cups rolled oats |
1 cup unsweetened coconut |
1 cup sunflower seed (or a mixture of seeds of any choice) |
1 cup flaked almonds |
1 cup raisins |
6 teaspoons baking powder |
2 teaspoons baking soda |
4 teaspoons cinnamon |
Directions:
1. Mix all dry ingredients together 2. Add dry mixture to wet mixture and mix thoroughly. 3. If it seems too dry, add more yogurt, if its too wet add more bran or wheat germ. 4. Spray muffin tins 5. Bake 350 for 20 to 25 mins until inserted toothpick comes out clean. 6. Be careful becasue they will burn if on the bottom rack. |
