Spicy potatoes, tomatoes and onions with an Indian kick. Ingredients:
1 onion, chopped |
1/4 cup vegetable oil |
1 lb potato, peeled and cubed |
1 teaspoon salt |
1/2 teaspoon cayenne |
1/2 teaspoon ground turmeric |
1/4 teaspoon cumin |
2 tomatoes, chopped |
Directions:
1. Lightly brown onion in oil in medium skillet. 2. Stir in salt cayenne turmeric and cumin. 3. Add potatoes and cook 20 minutes stirring occasionally. 4. Add tomatoes; cover and cook until potatoes are soft, about 20 minutes. |
