Adds a tropical flair to everyday breakfast Ingredients:
2 cups all-purpose flour |
2 tbsp baking powder |
1/3 cup sugar |
1/2 tsp salt |
1 (14oz) can crushed pineapple |
water |
2 eggs |
1 cop milk |
1/4 cup butter;melted |
pancake syrup |
1 cup toasted coconut |
Directions:
1. In a large bowl, combine flour, baking powder, sugar & salt 2. Drain pineapple & reserve juice. 3. Set pineapple aside 4. Add water to juice to equal 1 cup liquid 5. In a medium bowl, beat eggs well. 6. Stir in juice/water mixture, milk and butter 7. Add to flour mixture; stir only until combined. (batter will be lumpy) 8. Using 1/4 cup of batter for each pancake, pour onto pre-heated greased frypan. 9. Sprinkle each pancake with 1 tbsp of drained pineapple. 10. Cook 2 minutes;or until underside is golden. 11. Flip & cook until brown. 12. Pour syrup and sprinkle toasted coconut on each pancake |
