Great fruity muffin. Ingredients:
1 20 oz. can crushed pineapple |
1/2 cup slivered almonds |
2 cups flour |
1 cup sugar |
1 tsp. baking soda |
1 tsp. salt |
1 3 0z. pkg. cream cheese, softened |
2 tsp. vanilla |
1 egg |
1/2 cup sour cream |
glaze |
1 tbls. butter, softened |
1 cup powdered sugar, sifted |
1 tbls. syrup from pineapple |
Directions:
1. Preheat oven to 350 2. Drain pineapple, reserving syrup for glaze 3. In mixing bowl, sift flour, soda and salt 4. In another mixing bowl, cream together sugar, cream cheese, vanilla and egg 5. Add dry ingredients, alternately with sour cream and mix well 6. Fold in pineapple and combine 7. Heavily grease muffin tins 8. Divide almonds among tins 9. Add muffin batter to tins 10. Bake 20 minutes, then check 11. Remove to rack after cooling for 10 minutes 12. When completely cool, glaze muffins 13. Glaze 14. Combine all ingredients and stir until blended |
