I got this recipe from a Philipino friend who got it from her sister. A very delicious twist on macaroni salad. Simple to make and dissappears very quickly!! A meal in itself, it makes a nice lunch on a hot day. Ingredients:
1/2 lb elbow macaroni |
0.5 (32 ounce) jar miracle whip |
1 (20 ounce) can pineapple tidbits |
1/2 lb sharp cheddar cheese |
3/4 cup raisins |
1 medium carrot |
Directions:
1. Dice carrot and steam until crisp-tender. 2. Boil macaroni in boiling water 7-10 minutes or until al-dente. 3. Mix all ingredients in a large mixing bowl. 4. Chill for 2 hours or overnight prior to serving. |
