Cherries & Bananas make this cake a sweet treat Ingredients:
1 - 10oz bottle maraschino cherries |
1 3/4 cups all-purpose flour |
2 tsps baking powder |
1/2 tsp salt |
2/3 cup firmly packed brown sugar |
1/3 cup butter or margarine - softened |
2 eggs |
1 cup mashed bananas |
1/2 cup macadamia nuts or walnuts |
Directions:
1. Drain maraschino cherries - reserve 2 tblspns juice 2. Cut cherries into 1/4s & set aside 3. Combine flour, baking powder & salt in a small bowl & set aside 4. In medium sized mixer bowl, combine brown sugar, butter & eggs & reserved cherry juice 5. Mix at medium speed of electric mixer until ingredients are thoroughly combined 6. Add flour mixture alternately with mashed bananas, beginning & ending with flour mixture 7. Stir in cherries & nuts 8. Grease & flour a 9x5x3 inch loaf pan & spread batter evenly in pan 9. Bake in pre-heated 350 degree oven for about 1 hour or until loaf is golden brown & a toothpick inserted in the center comes out clean 10. Remove loaf from pan onto wire rack & cool completely 11. Store in tightly covered container or in tin foil |
