This is a quick and easy cheaters way to make hummus. What makes it cheating is that there is no tahini in this recipe. I guessed at the amount of servings. Ingredients:
2 cups canned chickpeas, drained but reserving liquid |
1/3 cup sesame oil |
1/2 cup lemon juice |
2 garlic cloves, mashed |
1 teaspoon salt |
1/4 teaspoon cumin |
parsley (to garnish) |
roasted red pepper, prepared, for garnish |

Directions:
1. Place chick peas, sesame oil, lemon juice, garlic, salt and cumin in food processor. 2. Mix until smooth. The hummus may be a bit thick, so thin it out by adding a bit of oil or liquid from the can of chick peas. 3. I prefer using the oil as it is richer tasting. But, if you are looking for a lighter version, use the reserved liquid. 4. Refrigerate. 5. Just before serving sprinkle chopped parsley and roasted red peppers on top. |
