I love egg salad, but it never struck me as very waist-line friendly. Toss out those yolks to make a much healthier version of this classic favorite. I'm providing the bare-bones recipe - you spice it or use whatever add-ins you would normally. Ingredients:
5 egg whites |
1 egg |
3 tablespoons light mayonnaise |
1 teaspoon mustard |
2 teaspoons relish |
salt and pepper |
Directions:
1. Hard boil eggs, shell. 2. Discard 5 yolks, leaving one for flavor. 3. Coarsely chop eggs. 4. Add in mayo, mustard, relish-and whatever else! 5. I use a pita bread, tomato and lettuce. 6. Enjoy! |
