From Complete Baking. Ingredients:
1 cup fresh white breadcrumbs |
1 cup golden syrup or 1 cup light corn syrup |
1/2 lemon, zest of, freshly grated |
2 teaspoons lemon juice |
1 (9 inch) pastry shells, basic nut or 1 (9 inch) rich pie pastry recipe |
1 ounce sliced almonds |
Directions:
1. Preheat oven to 400 degrees. 2. In a mixing bowl, combine the bread crumbs with the syrup and the lemon zest and juice. 3. Spoon into the pastry shell and spread out evenly. 4. Sprinkle the sliced almonds evenly over the top. 5. Brush the pastry with milk to glaze. Bake for 25-30 minutes or until the pastry and filling are golden brown. 6. Remove to a wire rack to cool. 7. Serve warm or cold, with cream, custard or ice cream. |
