I love the flavor of almond. This was one of the several almond cookies my mom used to make at Christmas time. Ingredients:
1/2 cup sugar |
1 cup almonds, chopped |
1/2 cup shortening |
1 egg, well beaten |
1 egg yolk |
1 cup flour |
1 teaspoon lemon zest |
1 tablespoon lemon juice |
1 egg white, slightly beaten |
Directions:
1. combine sugar and almonds. Reserve 1/2 cup of this mixture. 2. Thoroughly cream shortening and remaining sugar-almond mixture. 3. Add whole egg and egg yolk. 4. Beat well. 5. Add flour, lemon zest and lemon juice. 6. Mix well. 7. Spread in greased 9 square pan. 8. Brush with egg white. 9. Sprinkle with reserved sugar-almond mixture. 10. Bake at 325 for 30 minutes. |
