A yummy snack mix my family enjoys. Ingredients:
1 (17 5/8 ounce) package rice chex |
2 3/4 cups sliced almonds |
1 cup sugar (i use splenda) |
1 cup light corn syrup |
3/4 cup butter |
1 teaspoon almond extract |
Directions:
1. Place cereal and almonds in a bowl. 2. In a saucepan, combine the sugar, corn syrup and butter. 3. Bring to a boil over medium heat, stirring occasionally, until a candy thermometer reads 250° to 266° (hard-ball stage). 4. Remove from the heat and stir in extract. 5. Pour over cereal mixture and mix well. 6. Spread onto waxed paper-lined baking sheets and cool. 7. Break apart. 8. Store in an airtight container. |
