Great side dish for company. Ingredients:
2/3 cup blue diamond blanched slivered almond |
3 tablespoons butter, divided |
1 cup chopped onion |
2 garlic cloves, minced |
1 small green pepper, fine chopped |
1 cup long grain rice |
1/2 cup raisins |
1 teaspoon cumin |
1/2 teaspoon salt |
1 3/4 cups chicken broth |
Directions:
1. Saute the almonds in 1 Tbsp butter till golden;reserve. 2. Saute onions and garlic in remaining butter till translucent. 3. Add green pepper and salt, saute 2 minutes. 4. Add chicken broth. 5. Bring to boil. Reduce heat to low, cover and cook 20 minutes till liquid is absorbed. 6. Remove from heat and let stand covered 5 minutes. 7. Stir in almonds. |
