Fresh peaches may be substituted for frozen. Use 2 2/3 cups in place of the frozen package. Ingredients:
butter-flavored cooking spray |
1 (16-ounce) package frozen sliced peaches, thawed |
1/4 cup sugar |
1 teaspoon vanilla extract |
1/4 cup unbleached flour |
1/2 cup quick-cooking oats |
1/4 cup sugar |
1/4 cup packed brown sugar |
1 teaspoon baking powder |
1 teaspoon cinnamon |
2 tablespoons reduced-calorie margarine |
1 large egg white |
1/4 teaspoon almond extract |
2 tablespoons sliced almonds |
Directions:
1. Preheat oven to 350°. 2. Coat an 8-inch square pan with cooking spray. Add peaches, and sprinkle with 1/4 cup sugar and vanilla; stir gently. 3. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and next 5 ingredients in a bowl; cut in margarine with a pastry blender until mixture is crumbly. Stir in egg white, almond extract, and sliced almonds. Dollop flour mixture over peach mixture. Coat lightly with cooking spray. 4. Bake at 350° for 45 minutes or until lightly golden. |
