I was leary of this the first time I made it. I wasn't sure about the combination of flavors but let me tell you, you won't believe your taste buds. This is awesome. One we make often and enjoy every time we make it. Read more . Hope you do to.
Ingredients:
1 cup ricotta cheese
8 tablespoons butter
3/4 cup slivered or coarsely ground almonds
2/3 cup oats
4 hard boiled eggs chopped
1/2 cup softened raisins
6 eggs
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon fennel seed crushed
2 tablespoon oil for sautéing
Directions:
1. Place ricotta in a large bowl.
2. In a large heavy skillet melt half of the butter then toast almonds and oats until golden.
3. Pour almonds, oats and butter into bowl with ricotta and mix well.
4. Reserve skillet with any residual butter therein for later.
5. Stir chopped hard-boiled eggs and raisins into the ricotta mixture.
6. Beat raw eggs with honey, salt and fennel.
7. Stir the sweetened eggs into the cheese.
8. Heat remaining butter with oil in the skillet.
9. Pour mixture in to fry until golden on very low heat.
10. Cut into individual wedges and serve hot.
